You've probably heard it over and over again from various hygienists, detox specialists, or strict raw vegans. I, too, once thought the same thing: cooked food is the worst. When I was only eating raw food at the beginning of my healing journey, I demonized cooked food. So imagine the first moment I gave in and went back to eating something cooked—I felt so guilty.
So what's up, is cooked food really bad?
Yes and no, it depends on the circumstances. It may actually be a tool you use to your advantage, not the other way around. If it dominates you, you are a slave, no longer free. If you use it for your own good, you have the power.
COOKED AS A TRANSITION
Cooked foods are a bridge to gradually move toward a raw diet full of bioavailable nutrients. By changing gradually, we avoid extremes and avoid relapses and discomfort. We also give our minds a chance to adapt.
COOKED FOODS AND TOXICITY LEVELS
• FRIED AND GRILLED: the most acidic and harmful
• BAKED: less acidic but still quite
• BOILED OR STEAMED: The most alkaline of all. They still generate a level of acidity, but combining them correctly reduces the effect.
RAW FIRST COOKED THEN: This is best to reduce Leukocytosis or inflammation from cooked foods.
When we come from a diet high in junk food, refined flours and sugars, ultra-processed foods, and alcohol: It's good to start cutting out all those harmful foods and gradually introduce well-combined fruits throughout the day, and a hearty salad as your last meal, followed by a baked or boiled dish.

HEALTHY REPLACEMENTS
Not all cooked foods are created equal; we aim for the most natural and unprocessed options possible. Focusing on replacing our unhealthy choices with healthy ones is key to a successful transition. You can eat healthy and delicious food.
• White sugar: Replace with dates, maple syrup, stevia leaves
• White salt: Sea water, algae
• Refined and/or gluten flours: Gluten-free flours

• Industrial Meats: Proteins of vegetable origin, seeds, sprouts
• Industrial oils: Cold-pressed oils, avocado, seeds
• Industrial flavor enhancers: Seasonings such as oregano, turmeric, ginger, paprika, cumin, etc.
Deworm
Another key to moving forward is deworming. Our flora is accustomed to certain foods, sometimes some that don't even have a nutritional value. Ultimately, deworming makes your life easier; the bugs die, and they stop asking for junk food. Change your microbiota, and naturally, your choices will be the ones your body really needs.

CHANGE OF MENTALITY
Free yourself from guilt! We all make mistakes; eating cooked food isn't the end of the world if you do it right. If you make a mistake, remember that you can learn from it so you don't repeat the same patterns. It's a process of awareness; it takes time.
If we truly want to make changes and sustain them effortlessly over time, we must let go of resistance, draw conclusions, and choose the most nutritious and energizing foods for our bodies. We must truly overcome self-sabotage.
