RAW RECIPES FOR PARTIES 

Go out prepared

Many times when we go to social events, society is not prepared to offer us raw and delicious dishes. Making these types of dishes helps us to be able to share with others something delicious, healthy and alive to satisfy all palates. These recipes are raw but not trophic. They can be used outside of detox.

1- LEMON BARS (Dessert)

Base of the squares: 

1 cup pecan nuts, ¼ teaspoon salt and 8 seedless dates.

Preparation: 

Blend the nuts with the salt until it becomes a coarse flour consistency. Then add the pitted dates and blend again until it becomes a paste consistency. Place the mixture in a square container with parchment paper and place it on top, so that it can be easily removed from the mould. Allow to cool in the fridge.

For the Lemon Cream: 

1 cup cashews (soaked for 3 hours) or dried. ¼ cup water (if dried) or less if already hydrated. 4 tablespoons lemon zest (2 are used for the cream and the other 2 to serve), 1 tablespoon agave honey, pinch of salt, 1 tablespoon coconut oil, 1/4 cup lemon or lime juice.

Preparation: 

Blend until creamy. Add this cream to the base and sprinkle the remaining 2 tablespoons of lemon zest on top. Place in the refrigerator for 3 hours. Then remove, cut into squares and serve. Enjoy!

2- CUCUMBER BITES

Ingredients: 

1 cucumber, 6 sliced olives, salty cream cheese (It's like the lemon cream mentioned above but without agave, adding salt and garlic powder for seasoning)

Preparation:

Cut the cucumbers into even thin slices, place the cream cheese on top and the olives. You can also add tomato and basil, capers, it is very versatile.

3- PAPAYA SOUP WITH MANGO SAUCE

For the Papaya Soup: 

3 cups of peeled and coarsely chopped papaya, pinch of salt, 2 tablespoons of garlic powder, the juice of 1 and a half lemons, a splash of apple cider vinegar, a little cayenne pepper, 1/4 cup of water, 1 sheet of nori seaweed for plating. 

Preparation: 

Blend all ingredients together and set aside.

For the Mango Sauce:

1 Mango, 4.5 cherry tomatoes, a handful of cilantro, a small piece of chili, 2 tablespoons of chopped onion, a teaspoon of agave honey and a pinch of salt and garlic powder.

Preparation: 

Process it by pulsing it for a few seconds, it should have a texture of thick whole pieces inside. It is served with papaya soup or added to salads, wraps, sushi, etc.

Plating: 

Place the papaya soup in a bowl. Cut strips of nori seaweed to make “seaweed noodles.” Place a generous spoonful of the mango sauce and a spoonful of the salty cream cheese.
