Gluten is a protein compound that acts as an adhesive and binds things together. We find it in pizza, even in beauty products like shampoo.
Gluten is made up of two main groups of proteins: glutenins and gliadins.
WHO DOES IT AFFECT?
1-ALLERGIC to gluten or to any of the 12 different smaller units that make up gliadin. Any of these can trigger a sensitivity and inflammation reaction.
2-CELIAC DISEASE
